Menu Planning


I’ve been slacking during the holidays – who hasn’t, right?  Anyway, January’s here and I’m getting back on track.

Monday:
sweet & sour pork stir-fry & rice
reality: as-is

Tuesday:
cheeseburgers & tots
reality: went out to eat, which turned out to be a colossally bad idea

Wednesday:
meatloaf & baked potatoes
reality: Tuesday’s burgers

Thursday:
turkey ? I have boneless breasts and legs.
reality: thought I’d do Saturday’s soup, but ended up with Frito chili pie

Friday:
tilapia & couscous
reality: Sunday’s chicken kiev with tonight’s couscous

Saturday:
Taco Soup
reality: bbq pork sandwiches

Sunday:
Chicken Kiev
reality: grilled cheese and tomato soup

 

 

2 things first: Yes, it’s Tuesday, and last week was a record.  I actually made every meal on the plan, on the days they were scheduled!  I don’t believe that’s ever happened before.  So yay me.

Monday:
This is cheating, because I’m writing the menu after the fact: tilapia with tortellini
reality: I made the rest of the fish from Saturday with some tortellini and the rest of the meat sauce from Sunday.

Tuesday:
turkey breast medallions with pasta salad
reality:

Wednesday:
kids gone – split pea soup
reality:

Thursday:
cheeseburgers
reality:

Friday:
sweet & sour pork
reality:

Saturday:
beef roast with Yorkshire pudding

We’ve got stuff going on this week, but mostly in the daytime so the dinner schedule is largely unaffected.

Monday:
Let’s clear out the freezer of single-serve dishes; pot pies, individual entrees, small packages of mini-corndogs, hot pockets and burgers, etc.
reality: Everyone found their own and made a little room in the freezers.

Tuesday:
It’s St. Nicholas Day, the day we try to get the tree put up.  I’m torn between not cooking because we’re doing that and doing something special because we’re doing that.  For now I’ll put down ham but maybe switch it later.
reality: I did make ham, but nothing fancy about it.

Wednesday:
The kids have church that night but no choir, which means eating dinner on the early side and feeding everyone.  Soup sounds good – taco soup.
reality: Taco soup went over well.

Thursday:
Cheeseburgers as decreed last week, even though we didn’t actually follow through last week.
reality: Cheeseburgers as planned…I’m on a roll.

Friday:
Ham leftovers, or the ham itself if I didn’t make it Tuesday.
reality: Ham, with some mac & cheese and free artichokes that came in the mail – how cool is that?

Saturday:
Lemon Garlic Tilapia & couscous – come hell or high water I’m making this this week.
reality: I made it – not everyone ate it, but I made it.

Sunday:
Spaghetti & meat sauce.
reality: Oddly enough, without knowing this was on here, Chris volunteered to make this same meal Sunday morning.

 

Thanksgiving is over and company is gone, back to our regular programming.

I have so many burger patties of various types in the freezer I think I might as well make one day a week Cheeseburger Day.  Let’s call it Thursday.

Monday
I made turkey stock yesterday, so I’ll use that to make this: Homemade Potato Soup
reality: I got a different recipe and tweaked it but basically had potato soup.

Tuesday
Tamale Pie
reality: I didn’t look at the recipe closely and neglected to buy milk in a timely fashion.  Tuesday becomes Wednesday, and vice versa.

Wednesday
leftovers
reality: grownups did our own thing, kids were gone

Thursday
Newly appointed Cheeseburger Day.
reality: Tuesday’s tamale pie

Friday
Lemon Garlic Tilapia has been shunted now for two weeks.  Good thing it’s frozen fish.
reality: leftovers – fridge is emptied of those now

Saturday
The ham dinner I planned last week.
reality: pizza

This is going to be a week of epic fails, I can feel it already.  My in-laws are due to arrive “sometime today”…when until last Friday I thought it would be tomorrow.  They’re lovely people and I’m happy to have them visit, but I’m really not ready.  Not that the one day would have made that much difference, but I won’t be home most of today which makes me nervous.  I still don’t know how long they’re staying, though obviously through Thursday night.  They’re not staying here at the house, which at least makes things easier.  But, I have no idea what the meal plan is going to be like this week.  Thursday is the only given.  There may be a night – maybe two – when we either eat out or do take-out, but when?  I don’t know how many nights after Thursday they’ll be here.  Also, I’d planned another big – not as big as Thanksgiving – meal centered around a ham, because Mom had ordered a bunch of meat by mail including a ham, and as yet I have no ham.  So…here are my big meal plans and a couple of other possibilities to be used as needed:

Thanksgiving:
Turkey – Cooked and ordered from United thanks to my generous father-in-law in order to cut down on the amount of cooking I’d need to do.
Cornbread stuffing – comes with turkey
Mashed potatoes – comes with turkey
Gravy – comes with turkey
Corn Pudding – My personal favorite, simple as can be.
Maple Mashed Sweet Potatoes – A frozen side from Tender Filet.
Cranberry jelly – Your basic canned, but not the solid tube of jell.
Jell-O with pineapple – Most years I combine the two and put cranberries in the Jell-O, but A has requested them separate this year.
Deviled eggs – Nothing fancy, just mayo, mustard, apple vinegar, and paprika.
Rolls – Some come with the turkey but we’ll need more.
Green salad – I’m saving green beans for the mythical ham so we need some kind of “normal” vegetable.
Creamed Onions – I’m on the fence about this one, it’s a Mom-request.  If I get to it, I get to it, and this one seems easy enough.
Pumpkin bread – I sincerely think it’s unnecessary, and I think of it as a Christmas dish, but A insists.  Since she’s the one making it, who am I to argue?
Pie – Oh my, do we have pie.  A pumpkin pie comes with the turkey.  We also have more pumpkin, apple, cherry, and strawberry-rhubarb thanks to a school fundraiser.
If I’m feeling ambitious I’ll have Chex mix, baby carrots, pickles, and the like hanging around before dinner.  The way this week is likely to go…maybe not.

The elusive ham dinner:
Spiral-sliced Ham – From Swiss Colony.
Mac & cheese – From Tender Filet as with the sweet potatoes above.
Green beans – Here they are, but they won’t be in the (in)famous casserole, just steamed.
Scalloped potatoes – From a box, ‘cuz I’m fancy like that.
Green salad
Rolls
More deviled eggs
More pie
I think I’ll move the pineapple Jell-O down here.

Wednesday am: Still no ham.  I heard a rumor that they are leaving Saturday morning, so there won’t really be time for another big family dinner anyway.  Put aside for another week.
Wednesday pm: Ham arrived.  Still not making it this week.  It makes no sense to follow the huge turkey dinner with a large ham dinner the very next day. 

Tonight I’ll just plan for a “fend for yourself” dinner in case they get here early and want to go out or take-in with everyone.  Or they might go straight to the base and crash.

That’s 3 nights.  I’m planning on possibly 2 more nights with them here, then Sunday back to just us.

4 more dinners:
Cheeseburgers – Mom does like her Tender Filet; we have sirloin burgers, buffalo burgers, and bacon/sirloin burgers to choose from.
Lemon-Garlic Tilapia – Never got made last week.
Homemade Potato Soup – Something new to try that will work whether we have extra people here or not.
And one night to save for going out or eating leftovers – because heaven knows there will be plenty of those.

Rough Outline, pending guest plans:

Monday – fend for yourself
reality – The in-laws got in around 3 and crashed for the day.  Mom doesn’t like “fending”, so she bought pizza.

Tuesday – cheeseburgers
reality – I made cheeseburgers and baked beans, and no accidents were had.

Wednesday – tilapia
reality – We decided that eating out would be more prudent today than Friday.  Yummy dinner at Cracker Barrel.

Thursday – turkey dinner
reality – Dinner as planned.  The table took up the entire living room, things were hard to reach, E wouldn’t stay out from under the table, and the cherry pie took a header, but otherwise a very nice feast.

Friday – eat out or leftovers
reality – Leftover plates pretty much just like Thursday.  

Saturday – ham dinner
reality – Snack platters of beef logs, cheese, and crackers.

Sunday – potato soup
reality – McD’s for those of us tired of straight-up leftovers.  

 

 

This week is known as “get my tail in gear” week.  Of course Thanksgiving is a mere 11 days away, and a couple of days before that my in-laws will be here.  My house is NOWHERE near ready for company.  They won’t be staying here at the house, but dinner will be here if nothing else.  But that’s next week’s problem.  This week I have a few small things to take care of but nothing drastic.

Monday: 
Orange Pork Stir-fry
reality: A last minute need to go to town necessitated (ok, not really, but it was a heck of a lot more convenient) eating out.  I’m pushing Monday to Tuesday, Tuesday to Thursday, and Thursday to Saturday, leaving Wednesday and Friday alone and scrapping the taquitos altogether.

Tuesday:
Alex Guarnaschelli’s Marinated Skirt Steak Burritos (but with sirloin)
reality: pork stir-fry

Wednesday:
Lemon Garlic Tilapia
reality: ate out? don’t remember

Thursday:
Hungarian Goulash
reality: to each their own

Friday:
basic cheeseburgers, fries
reality: Alex’s steak but not as burritos

Saturday:
pre-made taquitos, rice & beans
reality: ate out after cleaning all day

Sunday:
Carla Hall’s Garlicky Meatloaf (I love The Chew, haven’t seen a dish yet I wouldn’t want to try.)
reality: cheeseburgers for those who didn’t end up in the ER (I took Chris for a bad scald on his foot; the kids and mom ate burgers, we scrounged later)

 

Yesterday’s grocery shopping was a bust, so a lot of this week’s menu is cobbled together bits from the freezer and pantry.  All those things I have enough for 1-3 people but not enough for 6-7.  Thursday I’ll be back at the store so a few meals after that will be pending tomorrow’s ad preview.

Monday:
lunch – leftover roasted chicken (maybe chicken salad) plus hot dog crescent roll-ups
dinner – pork chops and stuffing
reality – lunch was eggs & toast, dinner as stated

Tuesday:
lunch – garlic chicken and pasta skillet meal
dinner – turkey burgers and sweet potato fries
reality – dinner as planned

Wednesday:
lunch – teriyaki chicken wings and egg rolls
dinner – chicken parmesan and tortellini
reality – as planned

Thursday:
lunch – I’ll be gone, anyone at home is on their own.
dinner – hamburger helper

Friday:

Not a bad completion ration last week.  Now for this week:

Monday: Halloween – trick or treating and the church carnival.  Sonic has half-price corn dogs and I think the church will have food also, so we’ll eat what’s available while we’re out.

Tuesday: Jr. High dance – 2 of the kids will be gone (the picky 2, no less), so it seems a good time for that Pong Pong Pork I wanted to try last week.
reality: We did try the pork, not a bad recipe.  I’d do it again.

Wednesday: church – 3 kids gone, the rest of us are on our own. Odds are good mom will buy dinner out, or else we’ll chose from a plethora of single-serve entrees lying around.
reality: a little of everything

Thursday: coldest projected day of the week – beef stew.  I don’t know if I’ve ever made beef stew, but it was the meal deal offer at United so I got it.  Recipe suggestions anyone?

Friday: turkey burgers and sweet potato fries
reality: pizza

Saturday: There’s a Schwan’s garlic chicken pasta meal kit and a little tortellini left in the freezer, I think I’ll throw them together.

Sunday: Saturday or Sunday I’m shopping and planning to come home with a ham, and Sunday dinner sounds like a good time for a ham.

Last week’s menu went right out the window from day 1, though we did manage to have “real” meals a few times.  This week I have not shopped for food (except snacks) and don’t plan to.  So this is based solely off of what I can see in the pantry from here.

Monday: There is cooked chicken begging to be used up in the fridge so: bbq chicken sandwiches, sweet potato fries
reality: started too late for the fries; had mac&cheese

Tuesday: These have been sitting in the freezer long enough: braised lamb shanks, potatoes
reality: lamb, brown rice, broccoli

Wednesday: Kids’ church night so adults are on their own
reality: mom bought dinner at the diner

Thursday: I forgot these were in the freezer: chicken kiev, asparagus
reality: as written

Friday: A new recipe: Pong Pong Pork, brown rice
reality: wasn’t feeling well, Chris made spaghetti

Saturday: Town’s Scarecrow Festival, so we’ll either be on our own or eat downtown
reality: frozen pizza I forgot I had, after the festival

Sunday: To make up for several things that won’t be popular with the under 14 set: popcorn chicken, tots or fries
reality: as written

reality: ham, corn, and I don’t remember what

pork stir-fry or fried rice
reality: on our own

Sunday:
spaghetti and meatballs
reality: chicken enchiladas and rice
